What Are Microgreens?

Microgreens are the earliest stage of a vegetable plant’s development after the sprouting / germination stage. So yes, broccoli microgreens and the thick stocked leafy green we all know and love are the same plant - they are just harvested at different stages of their growing cycle. 
Microgreens are “living foods” or "growing foods" – Purposefully utilized and harvested during their most nutritious and delicious state.
