INGREDIENTS:
- 1 Slice of Sourdough bread.
- 1 Egg (optional, can make without the egg).
- 2 Slices of your choice of cheese (we recommend a sharp cheddar).
- 1/2 Avocado - if the avocado you have is small use all of it.
- Small bunch of Pea Shoots (to garnish)
- 1 - 2 Cloves of minced garlic.
- 1 tsp of lemon juice
- 3-5 Cherry tomatoes cut in 1/4s (amount depending on the size of your cherry tomatoes).
- 1/4 onion diced
- Small bunch of chopped sunflower shoots
- salt
- Choice of hot sauce
DIRECTIONS:
- Make small version of the Sunflower Guac.
- Mash the avocado in a bowl, add minced garlic, onion, tomatoes, sunflower shoots, dash of lemon juice and a pinch of salt. Underestimate on the lemon juice and salt, you can always easily add more, ensure you taste your guac to make sure it is not too salty or citrusy. Put to side.
- Toast bread, spread avocado onto the sourdough.
- Fry your egg in olive oil or butter. Add salt and black pepper as the egg cooks. Once egg is able to flip, turn over and add your two slices of cheese.
- Place egg on top of toast, bend microgreen pea shoots in half into a "V" shape, garnish.
- Add hot sauce and salt to taste.
- Serve and Enjoy!
